Peanut butter is officially the love of my life. I could eat it all day, every day. I'm the kind of girl who finds an excuse to put peanut butter in and on everything possible. You'll catch me eating spoonfuls of it whenever I can; I love it that much. So, why not put it into a cookie, right? Right. It was one of the best decisions I've made all week.
These cookies are the perfect consistency, crumbly but not too dry. They're the perfect level of sweetness; they taste delicious and honestly melt in your mouth. Made from only a few simple ingredients, they take absolutely no time to make which is a huge plus if you're running short on time or simply don't want to spend all day in the kitchen. Oh, and you only need one bowl :) Anyway, I'll let you get to it and make these cookies... you don't want to miss out! Enjoy, recipe below!!
Ingredients:
1/2 cup creamy peanut butter (my fav is wild friends)
1/4 cup maple syrup
2 tsp vanilla
pinch of sea salt
2/3 cup almond flour
1 tsp baking powder
Directions:
Preheat oven to 350
Mix all ingredients together in a bowl until creamy
Roll into small balls and place on a cookie sheet. Use a fork to press the cookies down and make criss cross lines in them.
Bake for 10-12 minutes until golden brown (keep a close eye on them as they go from perfectly brown to burnt fairly quickly.
ENJOY!!!!

ps. these would be DELICIOUS with chocolate chips or dipped in chocolate if that's your jam :)
