Chocolate Peanut Butter Blondies

Peanut butter in baked goods has been my jam this week, and these chocolate peanut butter blondies are seriously so good. They're so unique; thick, moist, soft, flavorful, and slightly crumbly. One of my best desserts so far if I do say so myself. Plus, they're gluten free, grain free, and refined sugar free. Even my brother, who claims he hates anything slightly healthy, LOVED these. Like he loved them; the morning after I made them, he hopped out of bed and immediately asked me for one of my blondies. If that doesn't convince you, I don't know what will.
These little guys are so easy to make, require only a few, wholesome ingredients and truly are treats which the whole family will enjoy. They don't taste "healthy" in the least, but they don't leave you feeling gross and heavy after eating them. They're the perfect snack or dessert, and even go perfectly with a cup of coffee or tea in the morning as they aren't overly sweet. I think you guys will love them as much as I do, and I hope you'll give them a try. They're seriously life changing and I'll sure be making them quite a bit from now on! Recipe below, enjoy guys!
*Disclaimer, as I made these for my brothers who absolutely hate flax eggs, I did use eggs in this. However, flax eggs should work perfectly in them.
Ingredients:
2 eggs (or flax eggs)
2/3 cups peanut butter
1/3 cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
1 1/2 cups almond flour
3 tbsp vegan chocolate chips
Directions:
Preheat oven to 350
Mix eggs, peanut butter, honey/maple syrup, and vanilla extract in a bowl until creamy.
Add almond flour and baking powder and mix well. Your batter should be pretty thick.
Separate the batter into two bowl and set them aside for a minute
In the microwave, heat chocolate chips until melted, stirring every 15 seconds.
Mix the melted chocolate chips in half the batter. Leave the other batter alone as this will give you a marbled look.
Grease an 8x8 baking pan and begin to add the batter. Use a spoon to place batter in the pan, and alternate between the two colors as you fill the pan. One spoon, peanut butter colored, one spoon chocolate colored and so on and so forth.
Once the pan is full and all the batter has been emptied into it, run a knife through your batter; mixing the two colors together and creating your marbled look.
Bake for 18-20 minutes or until a toothpick comes out clean.
